Plant-Based Oceans Callaloo

Callaloo is one of those dishes that is made a few different ways throughout the entire Caribbean. In the ‪‎Virgin Islands‬ it is made with up to 6-10 different medicinal herbs, when I make my Callaloo I pull from a plethora of styles. I prefer the coconut milk style and bird pepper from Trinidad but then I use the medicinal bushes and seafood from St. Croix. I like the grated pumpkin from Vincy and a touch of ginger from Antigua. I like callaloo with fungi but today we are doing a soup variation with plantbased seafood. . The point is- “to cook good food you have to had tasted good food.”-Drigo the Alchemist
